what do you do with your meats/veggies in the fridge when they’re going to go bad soon?

"Soon" implies that they are still fine.
In which case, I eat them.
Soup.
Use them up in a dish as long as they're still salvageable
i put everything that's not cruciferous in the freezer and when i have enough i boil it into stock
Stir fry
Ramen soup
Fried rice

Sometimes I get made fun of for having an "empty" fridge, but goddamn it's not like I need to stock up for the lunch rush at the Four Seasons.

Take all that wasted food money and put it in a Roth IRA. No one will pay you to suck their dick when you're 70.
I just cook it, it usually lasts 1-2 more days after cooked.

Curry or stir fry. Those will cover pretty much any vegetable or meat that you need to use up.
