I find the latest apples like Milwa/Junami and RubyFrost are tooth achingly sweet. When it's apple picking season I'll eat them by the peck, but at this point pretty much every variety is in cold storage and past it's best eating, so I probably won't have another apple until next Summer.

Granny smith is my go-to apple. I gravitate toward sour flavors. I love it in oatmeal, or with some cheddar cheese.
Among sweet apples, a good, fresh honeycrisp is great. Love the juiciness and there's something satisfying about the crunch that gives way to the juice release.
