Pork chops, apples, and onions with a side of mashed potatoes, green beans (canned), and drop biscuits.
I'm very happy with how it turned out.
I made a lazy chicken stir fry with soba noodles.
kale, mixed greens, arugula, tomato, avocado, kidney beans in a roasted garlic dressing.
I swear, this is a passable substitute for souplantaion's roasted garlic, minus all the fat and salt and sugar
dressing recipe follows:
1 head of garlic roasted
1/4 onion (half if you love onion like i do)
a pinch of salt
juice of one lemon
6oz silk tofu
2tablespoons olive oil
2tablespoons white wine vinegar
1tablespoon chili pepper powder (my own recipe, black pepper will also do)
3tablespoons almond milk.
combine all in food processor and blend until creamy. then blend some more.

I had roasted chicken breast with Grand Canyon hot sauce, rice and a tall, ice cold, glass of milk.
Now I'm about to head back down and grab a couple of cookies.
So far today, I've had 3 mandarin oranges, a large matcha soy latte, a shrimp and pork spring roll, and Wor Wonton soup. Haven't had dinner yet.
I made some bean and cheese enchiladas earlier. They were delicious and filling.

It's basically the top cut of a sirloin, rounded well and thick and puffs up looking kinda similar to a baseball. It's tasty because of all the tendon/fat around there and can be quite tender if gotten from a good butcher.
It's also looked at as the cheapest cut in a nice steak establishment (or so I've been told, I've been out to eat maybe twice in my life and those were to chains)
