I want to make some Herb-Crusted Brill (pic semi-related), whats your favourite recipe?

Should I dip the fish in eggs to make the crust stick?

I saw a video of gordon ramsay where he just loosely drops the crust on top, is that the best way?

You could just put a little egg was/milk to help it stick, as long as you don't drown it it'll be fine, but usually with fish the crumbs will stay on just fine
