Hey /cocks/ im making a roast pork belly for xmas dinner but I've never really worked with the ingredient before. Im looking for tips from people who have used pork belly before as well as some suggestions for sides. My plan is to roast the whole belly with the skin on using fennel seed, garlic, oregano and star anise. Hopefully it will come out like pic related.

Get the skin DRY. As in leave it sitting open in the fridge overnight dry.

Be sure you generously score the surface of the skin, the more time you take doing that the more crispy deliciousness will follow. Be sure you salt liberally, and maybe include a sweet element in your spice mixture (honey, black strap molasses, sourgum)

Thanks for the tip. I will definitely try that. I've also heard that rubbing the skin with baking soda helps to crisp it up but I'm worried it might impart a chalky flavor.

there are plenty of techniques for getting crispy skin...this was one that worked consistently for me

i do agree with the other poster about getting the skin dry......as in not just straight from the vacpac packet

I haven't tried it myself but it looks promising.

I've used this recipe and have been very happy with the results. You can probably do whatevs for the marinade, but the salt really works like a mother fucker for crispy skinz. Good luck opie.
