i've made something similar to that some time ago. but i did it in an oven, not in a pan.
it have tomatoe sauce, eggs, probably onions and pepper... some parsley, what could be wrong with that? its good

jusst one thing that the recipe dont said: i would start with middle heat for the onions to the step that you add the tomatoe, after that, when the tomatoe is hot and you have to add the eggs, i would recude the fire or the sauce. just my opinion, but i think that if you use a very high temperature it could get bad

I put it in ziploc storage containers and tried to reheat it before but it was never as good as fresh. You will never get the same consistency really. I have even separated it one egg per container with some of the other stuff and it just doesn't work out well even as single serving reheatable types

So I get onions or shallots and fry them with oil minced until caramelized, if I'm lazy I add baking soda to make the process faster
Then I add pasta sauce and herbs; cumin, coriander, oregano, thyme, rosemary, loads of garlic and cook until a deep red occurs, I see eggs and reduce temperature until the sauce gets reduced to that of tomato paste.
I only found out this was a dish two weeks ago from my roommates gf but it's taste with pasta or bread with beans
Queso fresco and or good real mozerella would work two. Or anchovies in the sauce

Make it to the sauce stage, refrigerate the sauce and reheat sauce/cook the eggs as needed.
