I worked in a Chinese place ~30 years ago. All they had were cleavers (not like OPs pic, thinner). Got used to it because it was all I knew. It has it's place, but it's a lot of metal to push through product.

That looks more like a heavy cleaver, not a chinese chef's knife.

Just depends on what you prefer. I dig the chinese chef's knife. Worked in a kitchen for 10+ years prepping and cooking buffet style for a conference center. The cleaver pictured would really only be useful cutting up meat and chopping through bones & connective tissue.

Yes, they are quite different to handle. I much prefer French and German chef knives. Get good and no one will justifiably complain about what you prefer.
