How do you like your risotto /ck/?

I don't eat a lot of risotto, but I really like this butternut squash one.
I usually make pork risotto with veggies.

Heat pot or rondo
Add rice & toast for a few minutes
Add diced onion & sweat til translucent
Deglaze with white wine & cook til most of the wine has evaporated
Add enough veggie stock to cover rice, stir frequently
Cook til most of the stock has evaporated
Ladle in more hot stock a little at a time & with a spoon or spatula stir constantly to work the product & help release it's starch
Taste often to check doneness
Alternatively squeeze a grain between your fingers, if 3 perforations appear your grain is ready to be finished
To finish: add butter, salt, pepper, your choice of cheese & olive oil if you like
Garnish with fresh chopped oarsley, chives & grated cheese
