There was a place near my house that made the best eggs benedict I've ever tasted. It was served in a small casserole dish and layered the same way, and the effect was that as you cut into it and ate it, the yolk and the hollandaise would drip down and penetrate all the layers and soak into the english muffins at the bottom.
They became these incredibly dense, yolk-and-sauce soaked sponges. It was delicious.
This placed closed down more than a decade ago. I think about it constantly. I've never found anything to match it.

Either tartar sauce or cocktail sauce. I prefer a nice spicy cocktail sauce -- at it's most basic, add horseradish to ketchup to get the desired spiciness. Tartar sauce is acceptable. Mayonnaise would be far too bland.
As for the picture, I would imagine that the diner would put his choice on the sandwich.
I ordered the shrimp poorboy at one rather pretentious restauraunt in south Texas once in which the cocktaili sauce was made with jalapenos instead of horseradish. It didn't work at all and I never went back. Ketchup and jalapenos results in a spicy ketchup, not a cocktail sauce. If they had been up front about using a mildly spiced ketchup instead of cocktail sauce, I would have ordered something else and may have been much happier with it. I felt that calling that a cocktail sauce was a bad lie.

Have you ever had hot guiness? Apparently dunking a hot poker into a pint of guiness is thing, and it'd be nice to have a winter warmer drink.
I sound like my father but I would say my favorite meal would be:
A nice T-bone steak. One side to get that nice meat flavor in quantity, and the other filet side to make you appreciate how good steak can really be.
Some hashbrowns fried crispy but with just a little soft in the middle.
Roasted carrots, Brussels sprouts, and parsnips finished with balsamic.
A nice ear of real sweet corn, found only August-September.
All eaten on the deck so once I've had enough I can throw the T-bone to ol'woofer and listen as he goes to town on the thing. This while the sun sets sipping on wine chewing crusty bread.

It's just soup made with farm hen but its so comfy and pretty much the first thing I eat when I visit my country. The hens here in the US are too hard and have a weird flavour.
One time at a restaurant I asked for the thigh portion and they gave me the whole thing with the egg sack still attached to the spine. Found a big hard-boiled egg and a bunch of little premature eggs.
