I have 1 pound of ground lean wild pork thawed out and left over from cooking last night's dinner. What should I make with it /ck/? I was thinking about lasagna or something but I'm open to other suggestions before I go to the store to buy ingredients. I will deliver photos of the results when finished.

I've made spring rolls before (with premade wrappers) and rolling them correctly is pretty tough. I see there's a couple lumpia rolling tutorials on youtube. I'd give that a shot if you're not used to rolling them because seeing it visually makes it easier to comprehend than just written instructions

OP here, yeah I guess you say that I "found it outside". I live in Texas and there are several million wild, feral pigs that are destroying farmland and natural habitats all over this state. They are a non-native, invasive species and as such can be killed by any method at any time day or night, 365 days a year. I normally shoot and butcher at least 5 a year myself. My friend's parents have a 200 acre "ranch" back in my hometown in East Texas that I'm allowed to hunt on whenever I want and the place is completely overrun with wild hogs.

I get to shoot guns and it provides me with all the free meat I could possibly want. Don't be jealous now.

The meat is also technically "organic" and doesn't have any hormones or antibiotics in it. It instills a great sense of pride to cook with meat that came from an animal that you personally killed and processed. Lots of people take their kills to a butcher or meat processing facility to have them process and package it but I personally feel like that takes away from the whole experience. It's also fairly expensive to have wild game processed which kinda defeats the purpose of 'free meat'.

My dad started taking me hunting at a young age and taught me how to process game when I was like 8 or 9 maybe? Since then it's just been repetition and practice. I can take a fresh kill, hang it up, skin it, quarter it, remove the backstraps, tenderloins, and neck meat, then gut it and remove the heart and have it all on ice with the guts and bones in a tub ready to be hauled off in about 45 mins by myself. I generally let it rest on ice in a cooler (adding more ice as needed and draining the water off a couple times a day) for around 3 days and then I'll process and package the meat. I save some big roasts from the back hams, package the tenderloins up whole, cut the backstrap into ~6" long pieces, and grind the rest of it. I used a hand grinder for most of my life and it gets the job done but my friend got an electric meat grinder and that sure does make life a lot easier when you have 40+ lbs of meat to grind at once from multiple kills.

So I've got the filling made up. I used some 'broccoli slaw' that I had sitting in a bag in my fridge in place of the cabbage strips and carrots. It contained shredded red cabbage, broccoli, and carrots so I figured it's close enough. Damn this made a lot of filling...

The wok has been rinsed, reheated and wiped down with oil, all of my prep dishes are rinsed and in the dishwasher, and the filling is sitting in a bowl covered with plastic wrap. I'm gonna drink a beer and take a break before I start the long, arduous process of making the wrappers.

I JUST finished cooking it all. I decided to go double duty at the end and make wrappers, roll lumpia, and fry batches all at once, things got a little hectic. I had one blowout (tried to roll too tight and ended up tearing the wrapper) and 3 or 4 of them tried to unroll on me while I was frying but overall they turned out great considering I had no idea what I was doing going into this.

Yeah, actual elapsed cooking time was probably closer to ~3-3.5 hours or so. It would've gone much, MUCH faster if I had 2 8"-10" non-stick skillets instead of just one for making the wrappers. I also could've used another person in the kitchen rolling the lumpia and frying them in batches while I was busy making the wrappers.
