KFC fries in pressure cookers. Thus, the fat and grease is driven down to the bone by pressure, and this makes the meat oily as all get out. It also keeps the coating on, because the steam layer doesn't really happen underneath.

But, it's why KFC always gives me a stomach ache. It's horrible.
