I really liked it, it was pretty easy to make too, I've never had shepherds pie before though so I don't have much to compare it against.

My experiences has been that shepherds pie is kinda shitty leftover anyway. Probably because potato and meat re-heat so differently.

Also the best shepherds pie I've made yet was actually following James May's (of top gear) recipe (including downing half the wine while cooking.. I skipped the mushrooms though). It's ultra simple but then that's what the dish is supposed to be. He adds a bit of fresh ground cardamom, which really does make a difference.

OP, filling looks good, however I prefer carrot a bit more chunky and the sauce a bit "richer" looking - though perhaps this may just be a bad photo.

I think the dish would stand to benefit from crisping the top layer of potato slightly too. One popular technique involves using a fork to run over the surface of the potato, creating little ridges and enhancing surface available for browning.

Lastly I think using a high-sided vessel trumps using a skillet. It may be called a "pie", but the best shepards pies tend to be thicker with more clearly delineated layers.

Cheese on top, though not exactly traditional, can be nice too if you can get it to brown slightly.

Yes, it will. With more leafy greens it kinda kills the texture such as basil, but rosemary is a bit more hardy.

Looks really mushy, not enough sear on the meat, and not enough browning on top.

I usually make mine based on a composite after watching a few youtube videos (the two chef wishes, ramsay f word, marco knorr commercial, etc) and wing it. There's always great tidbits in each video, like Chef John's advice on mixing the mashed potatoes, Ramsay's advice on parmesan, Marco's advice on the potato to mince ratio, etc.

Personally I prefer cottage pie but that looks ok. Both are comfort foods to me and I don't think anyone should be getting upset about specific recipes for them if you're just cooking at home.

You should run a fork along the top of it which crisp up when baked.

Some people top with a bit of grated cheese and I always put a bit of English mustard in the mash to give the top a bit of a kick.

Doesn't look bad OP, I'd suggest using a deeper dish and dotting the butter on top instead.

Pic related however is fucking awful, what the hell did he do to the potatoes? It looks like poorly mixed flour and water somehow. I thought this guy was supposed to know how to cook.

If any anon had posted this pic we'd be rightly ripping them a new one.

I think I've spotted a problem and the cause of that gnarly look meat in your photo. You should sear the ground lamb before the onion and carrot. Don't add the onion and carrot until the meat is nicely browned.

Also, use a deeper baking dish. The ingredients all sound great and I'm sure it tastes nice, but the techniques are probably not giving the best textures.
