Hello /ck/!

For this week's cook-along we will be making a bacon and leeks pie.

Then salted caramel pumpkin seeds.

Ingredients
10 slices of bacon
4 large leeks
1 cup cream
2 eggs
1 sheet of puff party (make your own if you'd like)
1 spring of tarragon
1 table spoon dijon mustard

1. Slice the leeks in rounds about 1/2" thick, Rinse well to remove any sand.

2. Transfer to a plate lined with paper towels and set aside to dry.

3. Get a large skillet and start cooking bacon.

4. Set aside on a different plate lined with paper towels to drain.

5. Drain most of the bacon fat from the skillet. Add the leeks. Spread to mostly a single layer and cook undisturbed for a couple of minute to get some coloration on them.

6. In the mean time, chop the tarragon and whisk together with the cream and eggs.

7. And line a pie plate with the puff pastry.

8. Poke holes in the bottom with a fork.

9. Your bacon should be done draining so chop it up.

10. Brush the bottom of the pie with the mustard.
Add the cream mixture and the chopped up bacon. Add back pepper.

11. Add the leeks.

Bake in a 375F oven for 30 minutes.

On to the dessert!

Ingredients:
3 tablespoons sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/8 teaspoon ground nutmeg
2 cups raw pumpkin seeds, rinsed and pat dry

Caramel :
2 tablespoon butter
2 tablespoon each, brown sugar and granulated sugar
1/2 teaspoon fleur de sel

You get nice bites of bacon and the leeks are still firm and slightly caramelized so you get texture and flavor from them. The tarragon is more muted, just tying everything together.

2. Combine the pumpkin seeds and the spiced sugar.

3. Turn over to a baking sheet lined with parchment paper.

Bake in a 300F oven for 25-30 minutes.

4. Towards the end of the cooking, melt the butter in a large skillet. Add the sugars and fleur de sel. Keeping the heat on medium, stir until no longer grainy.

5. Take the baked pumpkin seeds out of the oven.

6. Toss the seeds into the caramel and stir to coat. Cook in the caramel for about 1 minutes.

Then pour unto a clean, cold, baking tray lined with parchment paper.

Allow to cool fully and enjoy.

this is really the glaring flaw.

other than that, I would've seasoned the leeks when I cooked them, also added a pinch of nutmeg to the cream maybe. looks good though, would certainly eat.
