Hey /ck/ tried to make ceviche and it was awful. Followed the instructions here http://m.wikihow.com/Cook-With-Lime-Juice
Left it in the fridge for 8 hours like the instructions said, basically fish jelly at that point.
Only had steel bowls (pic from instructions somewhat related) but thought they were non-reactive, guess I was wrong. Any co/ck/s out there who can share a non shit ceviche recipe?

Don't use a bowl that actually WILL react with your food and fuck it up. That page's introduction was fucking correct. I bet you store your egg foam in an empty milk carton as well.

only firm, white flesh, preferably sea fish. Tilapia is perfectly acceptable. Fresh. Marinate in lime juice for 20-30 mins maximum in lime juice, IN FUCKING EARTHWARE OR GLASS BOWL. Add cilantro and red onion (fines slices), salt, olive oil and birdeye peppers, also finely sliced. Serve over thick, lukewarm sweet potatoes, with corn on the cob as a side. shove a pan flute up your ass sideways for the best peruvian experience and as a penance for wasting goddamn salmon you cunt
use a glass bowl, don't use tomatoes and add bell peppers sliced in cubes. Mix everything and don't put it in the freezer leave it outside
