Thanks for the feedback, I'll do that next time. I didn't take a lot of photos because the whole process took maybe 20mins, and my hands were tied sauteing and stir frying most of the time. I suck at multitasking.

Your rice looks too sticky. You should have left it in the fridge to dry longer. You also need to cook your fried rice on a hotter wok, you'll noticed restaurants the rice is more puffy due to properly bloom from the high heat. Personally, I'd cut the shrimp and add last when most of the liquid has steamed off. And add ginger. Also don't add salt, the soy sauce should add enough salt flavor, any additional salt will draw moisture out of the rice and make it dry and unappetizing.

Should I have rinsed the rice before cooking? You're right, I didn't cool the rice for very long I'm the fridge, it was only I'm there for about 15 mins after coming out of the rice cooker. As for the heat, the instructions I used never said to increase heat so I was frying on medium, next time I'll bump it up to high.
