Life-long vegetarian here. Are there any meat dishes that you would consider 100% "must try before you die"?

Smoked brisket from Texas.

Rendang, I think. And Madura duck with black spice paste (bebek madura bumbu hitam). I think the thing that makes it black, kluak, is toxic if not prepared correctly. Thankfully, you can buy preprepared (black) kluak paste. I don't think anyone prepares raw (white) kluak themselves anymore.

The most delightful thing I have ever eaten is foie gras parfait, pic related.

This dish took me to another place. I never knew something could taste so good. 5 years on, and the feeling I got when I first tried it has not left me.

Most really.
I love animals.

Seared foie gras
Duck confit
And pretty much everything else because meat is fucking good.

Good fried chicken.
Battered fish 'n' chips - don't know if you eat fish, but it's super good like that.
Pulled pork, with or without barbecue sauce, on a bun.
Steak, medium-rare to medium.
Thinly sliced sausages, like salami.

If you end up trying some, be careful overdoing it. I knew a girl who was vegetarian for years and then tried starting meat all at once and she got sick - couldn't digest it very well.

I honestly don't know. Most god-tier meat dishes are an acquired taste. Their glory is just not accessible for the untrained palate.

Just start with chicken breast and work your way up I guess.

Sirloin Steak is GOAT.

Sounds like the consensus says foie gras, OP.

Post pics.

Good smoked pork ribs.
A good bolognese.
Prime rib.
Buffalo prime rib.
Tuna steaks.
Virginia ham.
Venison back straps.
Mesquite smoked grilled chicken.

Too many to list, really.

that looks unbelievably disgusting

just because it's illegal in some places doesn't mean it's cool to just randomly throw foie on everything that moves
>>

>just because it's illegal in some places

Just looked up CA law to see how recent the ban was; turns out it's been lifted.

And nobody thinks it's "cool" because it's controversial (aside from maybe a few people during the controversy with >>7043099, which you probably have no idea what it even is).

People love foie gras because it's the tastiest thing on the planet, and it's too expensive to ever become a "meme food"...
