it should be the same as using apple pay. you open an app that shows the QR code for your bitcoin address and the shop scans it, maybe you need to confirm something or enter a password.
the trouble with bitcoin is that as previous anon mentioned, it takes more than an hour to confirm the payment. for it to be useful, it should happen instantly. not shilling but trumpcoin happens in a minute or two, i don't know why bitcoin takes so long.
bitcoin is handy for transferring large sums across the world, where an hour or three doesn't make a huge difference, but at the gas station it is pretty impractical.
