Next to my regular job, I make money on the side. Via the internet, search engine evaluator. I want to save this money (400-800€/month) on an investment account. ETFs or whatever.
However, I don't want to pay taxes.
Is that even possible? Can I do my taxes without mentioning my minijob/showing them an investment account?

You can avoid paying taxes in the short term by reinvesting any dividends you receive from stocks or ETFs.
You don't pay tax on money made from investments until you actually cash out, so you can plan this however you like in the future.
However there's no way to avoid paying tax on the income from your side hustle besides straight up lying to the tax man, which if it's fairly small amount, they probably won't give a shit about.
Although if they do give a shit about it, then there is no way you're going to hide it.
Alternatively you might be able to set it up so that your side hustle pays directly into a tax free retirement account or something if you want to think more long term.
