They don't really, or rather not the way you are thinking.
Back in the day everything was handled by "white-shoe firms" in consulting, law, and accounting. A Jew couldn't get a job at any self respecting white shoe firm, nor could a catholic or non-anglo. These days Jews are, at best, mid-level or junior partners in most firms and senior at very, very few.
Jews disproportionately went into business, law, and finance because in medieval times it was what they were relegated to because they were forbidden by law from owning land when that was the way to money and power. Then the industrial revolution happened and those professions became lucrative. By comparison, the Gypsies were artisans and smiths, particularly known for their fine metal work, and the industrial revolution bankrupted the clans and drove them into common thievery.
In short Jews are more likely to work in lucrative and influential professions, but they don't have any real power.
