I like business but economy might be worth more.

I just graduated from an OK school with a BS in Econ and BS in math, if you go to a good school I'm assuming BS isn't a very big deal but from a crappy school it makes a difference
The jobs I'm applying to all want Econ, don't even mention math.
Finance is good too

Yes. An econ major could get you into practically any professional job as much as any other major. As long as you have a quantitative major, the specific choice isn't nearly as important as extra curricular activities, grades, and work experience.

Yes, that's what I did and I'm doing well enough for myself. Try to get internship XP, if not, its not the end of the world.
