How many shares do I issue, and at what price?
Is a shareholder's agreement necessary (the directors will be myself and 2 friends of mine)?
Am I in over my head or do I just need to educate myself more first?

Not sure. In the US you just have to say how many shares are available and who your executives are. Shareholders agreement could be very helpful regardless. Honestly, just cough of the cash to get a lawyer to walk you through it.

No the shares are valued later. Initially.
You could put in 0$ have 90% of the shares and 1 guy put in $1M for 1% shares. and 1 guy could have 9% of the shares with 75% of the voting rights.
THe number of shares can be split and reverse-split later at any time to create what ever dissolution you choose.
What ever is the companies value if you've got $1000 in the business bank account and a gorrillian shares the value per share is 1k/gorillian. or 1 chimpillionth of a dollar.
Its nothing worth worrying about you just put something arbitrary and according to the agreement between you and your buddies.
