What makes it better than bitcoin other than its new? Lots of these things are over my head, I am a engineer so I only took introductory micro and macro economics. So explain simply, why is it bitcoin 2.0 and not a bitcoin copy?

Because it's turing-complete. This makes it more difficult to secure, but also gives it much more functionality than simply keeping track of numerical values.

my basic understanding is that ETH can somehow be converted to computing power (can use it to run programs etc), which supposedly gives it inherent value versus BTC which is essentially digital fiat

It's more like a protocol or a layer of web technology. You can write "contracts" which are basically programs that are hosted on the network. The currency is used to run lines of code in the programs.
