I'll soon publish a website that'll sell some virtual goods. I plan to sell them via Paypal. Thought, I want to protect my business. I know it's possible with Paypal to send money then cancel the payment.
How can I avoid that ?

using another platform to sell your goods. there's so much shit they do behind the scenes you have no idea. online fraud is out of control.
I assume you're pretty small scale and will be doing whatever it is you're doing by hand more or less. you'll probably take a few loads in the mouth due to fraud no matter how hard you try. get the funds out of your paypal as soon as possible too and dont link it to your main bank account, they will freeze it as soon as they find a reason to.
