I love econ, no doubt in that. But lately being a pilot getting more and more desirable for me. What it takes to be a pilot for a middle-class, econ student in US or EU?

If you want to fly anything other than small prop planes in someplace like Minnesota or Alaska you are going to need at a minimum a BA in Aerospace Engineering. The majority of airline pilots and most private jet pilots all either have BAs or MAs in some type of engineering (fluid dynamics and aerospace are most popular)
Air Force (really Navy) is your best shot but those pilot spots are beyond competitive.
The Air Force doesn't have too many pilots. Navy would give you better chance but no guarantees.
If you want a for sure flying gig, join the army under the woft program.
Or just get your pilot license and fly as a hobby, really not that hard to do.
