I rarely go to restaurants etc, but when I do the service is usually pretty poor. Typical schoolkid waiters doing the bare minimum to finish their shift, why would I tip that?

I have been to a few five star restaurants and steak houses. The difference is night and day. The waiters are actually on hand then entire meal, do things without asking, you know. The real deal. I tip these.

If I can make someone's day a bit better, I will. If someone is exceptionally rude or keeps fucking up, I inform them. If they refuse to adjust course, they receive no tip. This is 100% how it works.

In most states the wage for servers is $2.13 and hour. BUT if a server makes less than minimum wage including tips (i.e. less than about $5 an hour in tips on average) the owner has to make up the difference. Because the actual minimum wage is still $7.25.

When you add it all up, the first $5 of tips a server makes every hour goes straight into the pocket of the owner.

But it gets worse. Most restaurants consider bussers and hostesses "tipped employees" too for bullshit reasons. So they get the $2.13 treatment too. But the ownership makes up the difference with tips pooled together from the servers. So the host might actually get paid $8 an hour on her paycheck, but the bullshit rule allows the ownership to pay for $6 of those dollars with money taxed from the servers.

When I do, I go to the spots I'd want to work at and tip about 30% so the staff likes me better and gives me more preferential treatment. Hell, it's a pretty small industry and you never know who you might come across later.

But most servers are lazy and make life for the kitchen worse than you can possibly know. At least everywhere I've worked, and everyone in the back I've talked to, 80% of the time it's your server's fault if your food is cold/wrong because they're the fools who put in the order wrong and are making us do it twice.

If you want the kitchen to get a cut dont tip cash, the servers are supposed to report them but they never do

As a base rule of tipping, you want your waiter/waitress to be there when you need them.

Hell, just do it like my pops used to do, set 20 $1 bills on the table and tell them straight up "This is your tip money. Every time you screw up, I'll take a dollar off."

For instance, back in 2007 we had some of the Waltons come eat at our restaurant, and I was their waiter. 2 hours of refilled drinks, serving wines, socializing, and doing the best job I could to set the standard for our restaurant... they left a two dollar bill on what was close to a $450 ticket.

I still have that bill. I won't spend it, just to remind me of how ungrateful people can be.
