I take my meat and put it in a pan add Worcestershire and cracked pepper. I put on low. Until the Worcester starts to evaporate. Flip and add more Worcestershire when it start to evaporate hold pan at an angle and finish as a sous-steak. This means you are doing a high heat with Worcestershire boiling the meat. Flip twice and you have a medium-_rare to medium well. Perfectly soft and easy to cut and chew.

Black Angus New York strip medium rare cooked over a bed of hickory coals. I was able to do that with a Kobe beef New York strip once. Shit's expensive as fuck though. I only ever use a 60/40 mixture of salt and pepper on both sides before slapping it on the grill.

Get a flank steak with plenty of fat. Salt the ever living shit out of it. Let it sit for 1.5 hours on the counter. Rinse it off. Sear that bitch fast and hot. Cut it up into strips. Best fajita meat. The salt pulls the moisture out and the fats don't drip out into the fire. You'll get the most authentic fajitas possible.
