If we assume the water balloon starts of at room temperature, it's going to take a lot of heat to be able to fuse. The sun only produces as much heat as a cold blooded animal pound for pound. So the water would easily accommodate the heat energy of the sun if it was spread across it, but even if they meat at the edges and collide, the heat alone wouldn't be enough to create fusion in the water.

The main consequence would be the huge density of all that water. The sun is only made up of hydrogen (ect) gas which is thousands of times less dense than water, but it still collapses down to a very dense core due to gravitational attraction. This would be much stronger in the dense water,so i'm not entirely sure what would happen at this point, probably just a black hole as the chandrasekhar limit is only about 1.4 solar masses, and we've got a ball of water that's much much bigger.

So when you have such large amounts of things that aren't gas, the answer is usually just 'black hole'.

Which if i have done my math correct says that water balloon is slightly less massive then the sun. ~0.7 solar masses.

So the sun would win since it has more mass, the resulting star of about 1.6- 1.7 stellar masses would be very bright, noisy(EM wise) and cause mass extinctions and perhaps make earth too hot to sustain life, as sun brightness would increase.

They sun isn't "burning" or "on fire" if it was it would've only shined for a few million years.

What you see from the sun is actually closer to a lightbulb (blackbody radiation) than a fire (envision from ionization) as the outside is simply heated by the nuclear fusion.

Anyway, I say the rubber is more or less irrelevant because the chemical formula for rubber is C5H8. It'll break apart instantly onto the water that will break apart with it. The carbon and hydrogen will float around in the star, maybe getting fused in the core.

When the sun and ex water balloon collide it won't matter. Having a good chunk of 2 solar masses instantly fuse is going to release enough energy for anything close to it to blow up.

Crunching some numbers (a quick Google of heat of combustion of rubber gives a high of 45,000 J/g, let's call it 5*10^4 J/g or 5*10^7 J/kg

Let's say the water balloon is the same size as the sun and the rubber is a whopping million meters thick

So volume rubber=4/3*π*(R^3-r^3)
R=radius of sun+rubber=6.973*10^8m
r=radius of sun=6.963*10^8m
Volume rubber =~6.1*10^24 m^3
Assuming density won't change (of course it will, it will destroy itself)
Density of rubber ( ρ ) is ~1.02*10^4 kg/m^3
And mass= M= ρ × V=~6.22*10^28 kg of rubber on our star size water balloon

Burn all (with oxygen from who knows where) that up and you get ~3*10^36 J of energy

That actually seems kinda high tbh

A typical type Ia supernova is minimum around 1*10^44J, so around 100 million times more energy would be released

All that pressure will cause the molecules in the center to compress, separate to atoms, and start fusion.

The resultant heat will make sure that it's almost impossible for mole rules to exist in the star.

Good, on the 2nd one read the part about very high pressure ices.

It states that at about 2TPa it turns to metallic ice which isn't really considered molecula anyway. While in the center of the sun (water balloon too for equilibrium) pressures are around 25 PPa

I doubt you'd have ice at a thing higher than a say 20 TPa
