For example, your mind can't even fathom the concept of 1000. Of anything. Try it... think of 1000 of anything as a whole. You can't. Sure you know what 1000 is. You know it's 500 twice, or 250 multiplied by 4, but mathematics, like many things, is just a system we created to describe concepts we can't actually fully wrap our minds around. Our minds have to rationalize it using what we can understand. We have to break it down into segments so that we can know how many of those segments go into it. Then we break those segments down into even smaller ones until we can get to concepts we actually understand, like 1 or 2.

Almost all of the knowledge we have acquired as a species isn't naturally understandable to us. Sure, we still use these things in our lives just fine, but the point is that we have to come up with systems to describe these things. The concept of infinity is no different.
