You won't get those speeds with typical gigabit hardware we use in residential environments today. Typically you get somewhere around the 800 Mbit range with gigabit equipment.
10gigabit network adapters and switches are still expensive as fuck. Cheapest I've been able to locate is some shit brand refurbished NIC for $188. Typically I'm seeing $250-500+.
Not sure I know of many people who would spend that much money for networking equipment for residential use just so they can pull over 1 gigabit speeds on a single computer, since 1 gigabit is more than you would probably ever use unless you are downloading multiple high speed torrents at a time.

Speeds are never guaranteed on wireless. There are too many factors that affect the quality of the connection. I can almost assure you if you connected your computer directly with a Cat6 cable, or a really high quality Cat5e cable you would be pulling close to the 300mbit speeds.
