They call them false color images for a reason you know. A b/w image sensor allowed for greater sensitivity, a lower weight cost and better reliability. The image sensor can still tell what wavelength of light it's received and can therefore determine what color our eyes would see.

Also Neptune is blue, you can see it through a telescope.
