Have really been enjoying Chaource recently. Amazing because it is harder in the middle and creamy towards the rind. Quite sharp as well.

Also starting to get into Stilton these days but I never used to like it. Oh, and revisiting Red Leicester!

By far the best cheese I ever had was something called Crofton. Soft and creamy but sharp as fuck. Jesus that was amazing.

It's a typical cheese from the island of Sardinia, It's basically sheep cheese not pasteurized, so that the cheese fly can leave its eggs in it.

the larvaes (cheese fly maggots) work the cheese adding enzimes and making it creamy and many times as smelly and tasty. It's usually eaten with the larvae in it.

It's also called Casu Sattia Sattia (jumping cheese) because the larvae jump from it when you open the lids (so, for this and for the smell, it's better to eat it outside)
