NASA already proved that a vacuum doesn't make humans and animals explode due to lack of pressure. They figured this one out years and years ago when they accidentally exposed an astronaut to near-vacuum conditions in a lab experiment. Turns out that skin is pretty good at keeping our insides inside.
Also, the only way to passively dump heat in space is via infrared radiation, which is extremely inefficient. A body in space stays warm for a long time before losing it's heat and freezing.
That's not to say that other stuff wouldn't happen, but exploding and instantly freezing wouldn't happen.

Most of the freezing of the skin during decompression is from the last bit of air thinning out and sublimating moisture on the skin, causing flash frostbite. If there's nothing but a vacuum, however, there's no matter to actually draw the heat out via contact.
