That's the thing. Actors just have to learn technique, and then put them together into a dance. Actors don't have to learn how to apply technique, actors don't have to develop reflexes, and actors don't have to train their reaction time.

Yeah, this. Same reason Jet Li movies are more fun for the average person to watch than the best MMA fight. The real thing is messy and unpredictable and you have to be on your guard for things that don't even happen. You have to be ready for somebody to kick or punch or shoot or try to clinch or anything, while Jet is free to stand there on one let with his hands in his pockets because the only thing he's worried about is the left jab the choreographer told you to throw past his face.
