If you rig a fight but the guy doesn't defend himself at all and let himself be punched or the other way around, if you instruct him not to attack at all, it would look just too weird, it needs to look like a real fight for a bit to fool the rigging.
Meanwhile, plenty of fights have been settled in a couple of punch only, losing very fast isn't unheard at all.

Because he was rendered unable to control his physical body after the punch. He literally dropped, knocked out. After that, McGregor continued to hammer fist Aldo's head.
