Psychology is kind of difficult to explain but I view it as the subtleties and intricacies that wrestlers employ during a match to enthrall crowds and sell the story of what's happening in the ring to the fans.
If someone has poor psychology they lack the ability to do this; examples of guys with poor psychology are generally "spotmonkeys", who just rush from move-to-move with no care for the story occurring.
Prominent examples of guys who have great psychology are Foley, Stone Cold, Jake the Snake, Bret Hart and Daniel Bryan.
