Owen or Bret are probably my all-time favorites. They were just on another level in the ring, unreal fluidity, never really fucked up spots (outside of that piledriver) and could just go.
Christian is good too, as is Benoit. Kenny Omega is another guy thats just awesome, lots of Canadian wrestlers that are just all-around great.
