The top stars of Stardom are Io Shirai, Kairi Hojo, Mayu Iwatani, and Act Yasukawa.
Io Shirai is the ace of the company, their Tanahashi or John Cena if you will. The top star. She's a high flyer with high stamina who has never been gassed in her entire life. Kairi Hojo is the skilled underdog everyone loves. She's also a pirate and has a killer elbow drop. She's amazing at selling a beating.
Act Yasukawa is an outrageous drunken samurai that everyone loves, but not especially skilled in the ring. Mayu is Randy Orton. Whether or not you think that's a good thing is up to you.
Stardom's World Championship is currently held by Meiko Satomura, a highly regarded veteran from the Sendai Girls promotion. She is not a part of Stardom, and she took their championship, so Stardom is currently in a rivalry with Sendai Girls, trying to reclaim their championship.
Stardom is easy enough to follow, as they tape shows regularly and it gets uploaded to dailymotion usually.

Act Yasukawa did indeed get shoot beat up by another wrestler who has since retired. Act already had a number of health problems, including being blind in one eye due to Grave's Disease, being rendered infertile due to Grave's Disease treatments, and generally having a weak body. In that fight, her surgically repaired eye was specifically targeted for attack by Yoshiko (the woman she was wrestling) and broke her orbital. Left her a swollen and bloodly mess.
But she overcame all of that for her love of wrestling. She powered through all that and returned to the ring. She trained hard, bulked up, and I don't think she's retiring any time soon. She really loves wrestling. Her story and perseverance are what draw a lot of people to her in addition to her outrageous character. If she was actually amazing at wrestling too, she could be the biggest star ever. But she's only okay.

I watched men's Japanese wrestling for years and you literally never need to know what the commentary is saying. Their emotions carry through highly (they get really excited for nearfalls) and 95% of moves in Japanese are called in Engrish (Suplex = "Surprexu", clothesline/lariat "lariato") so if you primarily listen to commentary to hear move names, well, there it is.
Japanese wrestling (in general) tends to use in-ring storytelling as its medium instead of massive promos, backstage or in-ring segments, and usually the answer to "why are these two fighting" is no more complicated than "this guy doesn't like that guy, so now they're fighting" or "this guy has this belt and that guy wants it," or at best, "this guy beat the fuck out of the other guy last match so he's pissed." So you never have to worry much about being "lost" in the storyline because the commentators don't need to explain the backstory.
