Since martial arts (BJJ in particular) claim that their strengths are fighting against larger opponents, why does MMA have weight classes?

Surely since martial arts all talk of nullifying the size difference with their techniques having weight classes is not needed and a tiny 5'6" 120lb manlet could knock out or tap a 6'3" 220lb beast?

If I had to choose between being strong and being able to hit somebody once and send them flying
and being able to really see punches and slip/evade/negate them and then hit somebody in the nose really hard and then hit them in the chin
I would pick the second one
Seems more useful to me from a standpoint of tactics.
Strength is definitely good, but being able to avoid contact entirely and attack physiological weak points seems like a better move, but that's just my opinion

Skill can certainly eliminate, or equalize, size and strength advantages, however, when skill is equal, the advantage goes to size and strength.

Today, the skill level in the UFC is fairly streamlined, so offering weight classes makes for more competitive fights.

Unless you have a severe, SEVERE difference in size and strength, skill is a great equalizer that at least gives the smaller guy a fighting chance..

Because competitions assume that the fighters are roughly equally trained. If you hear that the physical differences can be nullified in all cases you can know that it's a load of bullshit. The point of MA is that with a shit load of training, a smaller person could defeat a bigger one with less training.

I am fairly tall and heavy and did JJ for quite a while - whenever I fought against the women in our club it was an almost assured victory, even if they were far better at JJ than me. Simply because they lacked the strength and weight to do much. Your technique can be as perfect as you want, if your opponent is strong enough to basically just pick you off the ground without bothering you'll lose. At least in a fight with rules, where you are not allowed to go for the throat or eyes.

Regardless of what you say, NOBODY is strong enough to punch somebody once in the chest or face and do enough damange that the person is dead. It comes from knock out if that happens, and knockout has VERY LITTLE to do with strength of the blow.

But regarding Option 2: Sure, you can slip punches. What you can't do is be untouchable indefinitely. You're going to get hit in a fight, and you'd better be able to take it.

If you imagine your "style" as being somewhere on a continuum where Option 1, being the Juggernaut and able to take anything and crush people with one blow, is zero, and Option 2, being the Flash and able to dodge anything, is 10, and say 5 is being able to take exactly as much as you dish out, then you need to come to terms with the fact that in the real world nobody can be better than about a 3 or 7.

...I feel like a dork typing that, but not enough to edit or rewrite it.

I always thought of a size advantage over an opponent was a kind of faux skill. Like a 120 lbs 5'4 boxer with 12 years of experience going toe to toe with a 210 lbs boxer with 2 years experience. The bigger guy has a better chance but only because he's bigger.

This is clearly impossible, ever second you are in any sort of combat encounter, your chance of being injured increases exponentially. Its a statistical fact that has few exception, and one of the only predictable aspects of a combat situation.
The person I'm talking about wouldn't slip three punches in a row and continue to slip punches, they would counterpunch. You don't fucking only slip and attack, you slip and attack simultaneously creating your own openings.
If a person that was a 0 squared up with a 10 and threw a punch, and the 10 slipped the punch and at the exact same time hit the 0 in the nose really hard
While the 0's eyes were still tearing up, the 10 would hit him once more directly on the chin
Do you think that once the zero has recovered he will be able to make his attacks with as much efficiency as his first blow? I mean, hitting somebody directly on the point of the chin even with a jab can give somebody serious brain damage, and at the least, very easily heavily disorient a person.
If a 3 squares up with a 7 this is possible. Its just that the 7 would have to have been training for at least 5 or 6 years for at least 14 hours a week

I am fortunate enough to have made friends with a world class professional female fighter, she has several championships under her belt

I train casually < 3 times a week, however I outweigh her by nearly 100 pounds
