Unforgiven 2004 was always my favourite in terms of standard PPV's. Best Wrestlemania stage was WM 20. Simple and elegant.
Honorable mention to Vengeance 2005 but I couldn't find a photo of that one. But it was in Vegas and the modled the stage to look like the Welcome to Las Vegas sign which was fucking GOAT.
