my SO and i don't live together but we chat every day or he'll leave voicemails when we're busy. When we fight or argue he doesn't respond or talk to me for days after and i don't know if it's a good way for him to cool off or not acceptable behavior for someone in a relationship. Thoughts?

If you don't care, it's acceptable behavior. If it bothers you, it isn't. Just a question of what you're willing to put up with. Talk it through.

time-out is OK. but there are rules for a correct one. basically, you have to let the partner know specifically that you are taking a time-out to cool down and will come back to discuss the issue within X minutes/hours. the recommended maximum is 24 hours.
try counselling, guys. look into non-violent behaviors/communication. you have a lot to learn, both of you
