When should I ask a girl im dating to be my girlfriend? Weve gone on a few dates and she seems genuinely interested in me. We have done something together almost every day this week too. Shes going on vacation for a week though, but we have a date planned for when she gets back. I want to ask before she leaves tomorrow, would this be a good idea?

If that's the direction you want to take things in, yes. You can't know until you ask and if you want a more committed relationship but she doesn't that's something you want to find out sooner rather than later. You've been dating for a while so it shouldn't come as too much of a surprise. Ask whenever it feels right.
