I really like working on cars and want to do it for a living, but I don't want to be struggling to find a job.

Perhaps soon more than ever, as fleets of self-driving cars and truck convoys become a reality. The personal ownership of cars might go down but maintenance and repair on the droves of commercial vehicles in constant use will still require human beings.

As long as people are driving cars, there will be a need for folks who can fix them.
It might be worth taking a class at your local community college to see if you like it.
