You understand incorrectly.
The appeal of monster girls for quite a number of people is the idea (and challenge) of making something traditionally monstrous and making it cute, sexy, or otherwise bangable. Sometimes this comes with domination, danger, or even violence, but that absolutely is not where the appeal of monster girls ends or even necessarily starts.
A big part of what makes monster girls interesting is that they reflect what we can't otherwise find, combined with what we want. It leads also to lots of girls who are *fundamentally different*, who are novel and therefore present exciting possibilities as well as traits that can reflect and exaggerate (visually or otherwise) an anon's preferred traits. For instance, an orc-girl being strong and stocky, or a spider-girl being dangerous and seductive, or a snake-girl being needy and insistent (seeking bodily warmth, binding by wrapping up, etc). The reversal of any of these works just as well for a lot of people.
In short, monster girls are exciting exaggerations of things anons like.

There isn't much to get about monster people. Their central feature is that they are exotic. Exotic is attractive. Once this theme is convered, monster people art can go in any direction and involve a secondary fetish such as domination (typically spiders) or milking (typically cows) or sexual powers (typically succubus). The secondary fetish can be anything and isn't entirely relevant to monster people as a whole. The central feature is still the exotic appeal.
