Because the game has character levels it's just a matter of grinding until you are untouchable in whatever area you are in before progressing further. In such a world everyone would ignore the trinity and just all become some variant of a tank. Everyone would also being maxing out smithing and alchemy maximize armour/potion efficiency.
In regular MMO's a single battle is actually a relatively long encounter and is rarely decided within a few attacks, unless either the character or the enemy are grossly over levelled, so there would be plenty of time to escape an encounter if HP dropped to threatening levels.

There's probably a level cap, in which your stat is diminishing compared to the enemies. Moreover many dungeon bosses are designed to be beat by a party rather than solo
