The point is that even if she does get returned she's no front runner for getting an actual ending where she can be happy since that one was more or less already used as some kind of gag material spin off more or less leaving her to be indefinitely sidetracked to the secondary position or at risk for some kind of permanent death situation. Either way there's little chance she's going to get any kind of fulfilling happiness on her own terms, but at the very best some kind of compromise of getting to live in the shadows of the person she loves and if she's lucky she gets to tug along at his shirtsleeve.

It's fine if you think her not being able to be with the person she loves is some kind of happy ending for her, but it's still less than she would deserve to get, and still more likely to happen than the actual happiness that she wants to have. There's really no point to try to hope for her getting something nice at this point when she's already been flat out rejected, removed from the story, and now ay best being used as a plot point to make other girl want to fall in love with the person she wants.

The point is that she can learn to not rely on Subaru as much. Subaru himself as aware of her own self esteem issues, and while he did stay by her side and help her, she still followed Subaru and loved him partially due to that.
So she could learn to accept herself and value herself more, and so far we've seen that yes, she loves him, but she's fully aware of his feeling for Emilia, and she's fairly ok with it, as long she can see Subaru.
