Pierot La Fou. I think it shows how good Bebop is that the episodes can vary massively in theme and tone but still be consistently good.
I think its harder to find a weakest which in my opinion would be Brain Scratch or Toys in the Attic.
Aside from the Vicious episodes Cowboy Funk, Black Dog Serenade and Sympathy for the Devil in that order
Ballad of Fallen Angels. I rewatch that episode all the time. Second would be Cowboy Funk. Third, Asteroid Blues

Cowboy Bebop hit the world almost 20 years ago. Dust on the moon doesn't even take that long to settle.

IDK about best, but personal favorite is Toys in the Attic.
First episode I ever saw so will always have a place in my heart.
