It depends on a lot of factors: willingness to continue, pressure from the industry, money, stress, how much work it takes to produce the manga they make, etc.
Mizuki Shigeru didn't stop drawing until he died, but he also didn't really start until he was over 30. Meanwhile, people like Togashi work themselves to the bone for different reason (e.g. no assistants). There's a decent change that he will pass away or just give up before HxH is finished. Same with Berserk.
