All that is left are the games, but you probably need to know basic japanese to get through them. Evangelion 2 apparently has a lot of lore stuff not present in other Eva media (First Ancestral Race etc).
You could also check out the art books of Sadamoto (Der Mond, etc), which are quite good and easy to find, along with other publications.
