To be fair, the fear and hate that humans direct towards the undead in the Overlord series isn't unjustified.
Normal undead hate all things living and aim to brutally end all life as we know it. Ainz is an exception but they can't know that for certain.
Frankly, if Ainz were literally any other heteromorphic race he would have an easier time building his empire and face less hatred and resistance than Ainz does because undead are the only ones known to be universally murderous and life hating.
It will simply take time to prove to everyone that Ainz isn't like that and doesn't want to kill everyone like the other undead do.

I once was on a chicken war and saw a conveyor: they basically put a chicken upside down by the legs, then line goes though electrical spar which zaps them unconscious then there is a circular saw on the level on their necks, they don't suffer much.
Demi's farm, aside from obvious production materials, also provide entertainment in form of torture for him and his subordinates.
It can also be considered as a positive thing since for them craving sufferings of sentient beings is a natural need.
But that doesn't look rational enough for me.

Considering how strong the residents of Nazerick are I doubt a few magical trolls would be a problem. I mean seriously, they would have to reach a level beyond 80 before they even became an inconvenience, let alone a threat.
Considering normal trolls are at best somewhere between level 10-30 depending on adaptations and training/strength I doubt it would be an issue even if the breeding doubled or even tripled their natural power.
For another kingdom it could be dangerous, for the Overpowered Kingdom of Nazerick it's an easy matter.

She wants two things, it seems. One, is Climb. She described herself as sort of gently obsessed with him and that her ideal relationship is one where she is in complete control of him. In order to keep him from leaving her, she puts on the act of the "Golden Princess" and manipulates things so that Climb will worship her. More recently, she has called him, her dog, and has noted that her favorite thing is to look into his eyes as they look at her.
She also wants camaraderie. When she was younger, she was noted as having a "monstrous" mind. Meaning not only that she was incredibly intelligent, but also exceedingly logical. An example would be, if you gave her the "trolley problem," she wouldn't even hesitate to answer, and would give you an utterly convincing reason for her answer, impossible for nearly anyone to dispute on anything other than an emotional level. She thinks things out to an extreme degree and will pursue her objective without heeding morality. This puts people off to the extreme. But both Demiurge and Albedo have become something like friends to her. They accept and acknowledge her ability, and intend to put her in a position of authority and power as a result.
She is not after power. If given a task, she will excel at it, however. Think of her like a Yggdrasil NPC that doesn't have a Player controlling her. She's sort of aimless and obsessive, lacking a great task but capable of fulfilling whatever she comes across.
Strictly speaking, acceding to the will of Nazarick is also the best move possible for the kingdoms that border it. She made the same decision as JUST did this chapter, but she made it faster, and is receiving more personal benefits already.
