You see her getting possessed by AM when she has a moment of weakness when Zouken tries to troll her by saying Rin would win the Heaven's Feel this time, when they were discussing killing masters.
The context is that this moment of weakness when she thought of Rin killing Shirou opened her heart up to hatred, it wasn't jealousy. That moment allowed her to be possesed, which Zouken was counting on. Remember the scene "Chess" from day 11? That was where Zouken was saying Sakura had unconsciously held back the mud and he wanted to give her the last push by making Shirou betray her for her mind to die.
